STRAWBERRY~RASPBERRY SEMIFREDDO

1 10 OZ BAG FROZEN STRAWBERRIES, LIGHT SYRUP
1 10 OZ BAG FROZEN RASPBERRIES, IN LIGHT SYRUP
1 TEASPOON VANILLA
1 CUP HEAVY CREAM
2 TABLESPOONS HONEY


POUR STRAWBERRIES WITH THEIR SYRUP INTO PROCESSOR.  


PULSE UNTIL SMOOTH PUREE.  TRANSFER TO LARGE BOWL.  


DO THE SAME WITH THE RASPBERRIES WITH THEIR SYRUP.  


PUSH RASPBERRY PUREE THROUGH A FINE MESH SIEVE INTO STRAWBERRY MIXTURE TO DISCARD SEEDS.  


ADD VANILLA.


BEAT CREAM IN MEDIUM BOWL UNTIL FOAMY.  


GRADUALLY BEAT IN HONEY UNTIL SOFT PEAKS FORM.  


GENTLY FOLD INTO BERRY MIXTURE.  


POUR INTO 8 - 4 OZ RAMEKINS.  COVER WITH PLASTIC WRAP.  


FREEZE AT LEAST 2 HOURS.  


REMOVE FROM FREEZER 15 MINUTES BEFORE SERVING.


MAKES 8 SERVINGS.
